This is the perfect dish to whip up when you can't think of what to cook for dinner. It's deeply comforting, it's versatile, it's forgiving - traits you'd value in any relationship, so why not on your plate? :b The perfect game plan for this is: Prep & simmer the chicken legs in the morning (it takes 10 minutes prep, max. super easy), then switch off the heat and go about your day. When you return to it, it'll have deepened in flavour. You can do this the night before too. As for the aromats, again, very forgiving - use whatever you've got on hand.

You can serve this over rice or noodz, add some green veggies, and you'll have a very tasty, perfectly balanced meal on hand. #onepotdrops

Ingredients


  • 500g chicken legs (bone-in, skin-on)

  • 1 Tablespoon sesame oil

  • 3 garlic cloves, left whole

  • 2-3 cilantro roots

  • 1-2 shallots, sliced

  • 1 thin slice of ginger

  • 500ml of water (may need to top up more)

  • 1 Tablespoon light soy sauce

  • 1.5 to 2 Tablespoons dark soy sauce

  • 1 teaspoon oyster sauce

  • 1 teaspoon sugar

  • 1 teaspoon fish sauce

  • salt, to taste

  • Noodles or rice, to serve with chicken


Directions


  • First, blanch your chicken so we can get rid of scum & gunk. That means boiling it in water for about 5 minutes. Then clean it under running water once more. Set aside.

  • Set your pan over medium-low heat, then drizzle in the sesame oil. Add your aromatics (Garlic, shallots, cilantro root, ginger), and saute for a few minutes until they soften and release their aromatic compounds.

  • Add your chicken legs into the pot. Then season with the light soy, dark soy, oyster sauce, sugar, and fish sauce.

  • Pour 500ml of water over. You want the chicken legs just covered. Cover with a lid and simmer on low for about 45 minutes to an hour, flipping the chicken halfway through. If you need to add more water at any point, do so. Switch off the heat. The longer the chicken sits in its soy bath, the more flavourful it becomes.

  • When you're ready to serve, check the sauce for seasoning, adding more salt if required. If it looks too watery, just remove the lid and crank the heat up to high to reduce the sauce to your desired consistency. Once the sauce is to your liking, serve over noodles or rice, giving each person one whole leg. Enjoy!
