In honour of Papa Zhang. His signature pineapple tarts that he's been feeding family and friends with for over 30 years. Each tart is skilfully hand rolled and features a buttery, tender, melt-in-your-mouth pastry, encasing a 100% handmade pineapple jam filling.
To make the filling, fresh pineapples are hand-grated (NO machinery at all) and patiently cooked down over the stovetop for hours, untill the fruit caramelizes into a sticky, jammy consistency. This requires hours of constant stirring and scraping the bottom of the cooking vessel to ensure an even caramelization of the fibrous jam.
Grating the pineapples by hand ensures you get that textural contrast in each bite from the shards of pineapple. Papa Zhang has strictly instructed, no machinery as it turns it all to mush. After hours of grating and stirring over the stovetop, the pineapples get cooked down to less than half the pot. A true labour of love, this is a completely different animal from the pineapple pastes you get commercially outside.
After days of work to make the pineapple paste, it is then portioned, weighed and rolled into little logs all of the same size - another full day's work. After which, Papa Zhang's signature buttery pastry enters the picture, and is also divided and weighed into tiny little portions. We can now finally assembly his signature tarts, where crust meets pineapple filling. Phew!
Note: Due to the labour-intensive nature of this product (100% hand made and rolled), we are only able to produce limited quantities per batch. Will be releasing more slots throughout this season, each time they're freshly made. More updates on Instagram!
